A few weeks back, I tried this dish at one of the few amazing Greek restaurants in the Netherlands, and let me tell you, I’ve been hooked ever since! This simple Baked Feta is so easy to prepare, yet so satisfying and delicious that it has become part of my weekly meal rotation in pretty much no time.

This Baked Feta Cheese recipe is a delicious blend of creamy, tangy feta and vibrant Mediterranean veggies, roasted to perfection in olive oil and herbs. Ingredients

  • 1 feta cheese block

  • 1 onion

  • ½ bell pepper

  • 3 garlic cloves

  • 150g olives

  • 150g cherry tomatoes

  • 1 tbsp olive oil

  • ½ tsp dried oregano

  • Salt & pepper

Directions

  • Preheat your oven to 200°C (400°F).
  • In a small ovenproof dish, drizzle 1 tablespoon of olive oil to lightly coat the bottom.
  • Slice 1 onion into julienne strips and add it to the dish.
  • Cut half a bell pepper into julienne strips or small cubes and toss them in as well.
  • Thinly slice 3 garlic cloves.
  • Halve a handful of olives and cherry tomatoes, then add them to the dish.
  • Season the veggies with oregano, salt, and pepper to taste. Mix everything together until the veggies are evenly coated in oil and seasoning.
  • Place a block of feta cheese on top of the seasoned veggies.
  • Drizzle a little more olive oil over the feta, and sprinkle a bit of oregano on top for extra flavor.
  • Bake in the preheated oven for 35 minutes, or until the veggies are tender and the feta is golden.
