Never thought making granola bars at home could be this easy, let alone taste this amazing! These Pistachio Granola Bars are a total showstopper. Rich, delicious, and made with wholesome ingredients; they’ll leave you wondering why it took you so long to try making them at home!

In the aftermath of the Dubai chocolate craziness, I have found myself the proud owner of a full pistachio cream jar that I was determined to use, one way or another. I thought of a million ways to use it, yet nothing seemed to hit the spot. But then, as if by divine intervention, inspiration struck: “Make Pistachio Granola Bars,” the voice seemed to say… and, of course, I obeyed!

Jokes aside, if you’re lucky enough to have a good blender, I highly recommend making pistachio cream at home; it’s fresher and it tastes so much better. Just a heads up, though: a weaker blender might struggle. Mine, sadly, didn’t survive the attempt!

These homemade bars are a way healthier choice than most store-bought granola bars, which often sneak in additives to help them last longer. Kept in the fridge, these Pistachio Granola Bars stay fresh for a week (if they last that long). You could try freezing them—though they’re usually gone within days at my house.

These Pistachio Granola Bars are a dream come true! Made with only six ingredients, they’re easy to whip up and taste like a high-end treat. Packed with rolled oats, crunchy nuts, sunflower seeds, honey, and a decadent pistachio cream, each bar is finished with dark chocolate and a hint of salt for the perfect snack or dessert!

Ingredients

  • 100g rolled oats

  • 75g mixed nuts

  • 10g sunflower seeds

  • 100g pistachio cream

  • 40ml honey

  • 1 tsp water

  • 50g dark chocolate

  • Salt and pistachios for decor

Directions

  • Preheat your oven to 180°C/350F.
  • On a baking tray, spread the rolled oats, mixed nuts, and sunflower seeds, and bake for 10 minutes. Let cool for another 10 minutes.
  • In a saucepan, warm the pistachio cream and honey over low heat until softened (about 2 min). Stir in 1 teaspoon of water for a smooth consistency.
  • Combine the cooled oats, nuts, and seeds with the pistachio cream mixture, stirring until everything is well-coated.
  • Press the granola mixture into a small to medium dish lined with parchment paper, forming a layer about 0.5 cm thick. Refrigerate for at least 2 hours.
  • Melt the dark chocolate in a bain-marie or microwave.
  • Cut the chilled granola mixture into 8–10 bars, then drizzle with melted chocolate. Garnish with coarse salt or chopped pistachios if desired.
