2 blood oranges
1 small red onion
half of an apple
100g feta cheese
200g corn salad / spinach
A few leaves of mint
15g pistachio (unshelled)
- Honey mustard dressing
1 tbsp Dijon mustard
1 + 1/2 tbsp honey
1 tbsp olive oil
1 tsp cider vinegar
1/4 tsp salt
1/8 tsp fresh ground black pepper
Directions
- Peel and dice the blood oranges, reserving 2-3 slices for decoration.
- Add the orange dice and corn salad to a large bowl.
- Chop the onion and dice the apple, then add them to the salad.
- Chop the mint and pistachios and add them to the salad.
- Add the feta cheese and give the salad a good mix.
- To make the dressing, whisk all ingredients together until you have a thick sauce.
- Pour the dressing on top of the salad and enjoy!
