Ingredients

  • Salad
  • 2 blood oranges

  • 1 small red onion

  • half of an apple

  • 100g feta cheese

  • 200g corn salad / spinach

  • A few leaves of mint

  • 15g pistachio (unshelled)

  • Honey mustard dressing
  • 1 tbsp Dijon mustard

  • 1 + 1/2 tbsp honey

  • 1 tbsp olive oil

  • 1 tsp cider vinegar

  • 1/4 tsp salt

  • 1/8 tsp fresh ground black pepper

Directions

  • Peel and dice the blood oranges, reserving 2-3 slices for decoration.
  • Add the orange dice and corn salad to a large bowl.
  • Chop the onion and dice the apple, then add them to the salad.
  • Chop the mint and pistachios and add them to the salad.
  • Add the feta cheese and give the salad a good mix.
  • To make the dressing, whisk all ingredients together until you have a thick sauce.
  • Pour the dressing on top of the salad and enjoy!
