Crustless Asparagus Quiche

Flowers are blooming, trees are blossoming, and asparagus is everywhere! Though I discovered this gorgeous veggie just a couple of years ago, I’ve been wildly obsessed with it ever since I realized how versatile and heathy it is!

Though I usually like my asparagus steamed or baked, this time I decided to go with something I’ve been wanting to make for a really long time. A crustless asparagus quiche!

This quiche is ready in no time and it’s really flavorful and delicious; and bonus you don’t have to worry about the added calories from the crust.

The best part about this recipe is that it’s incredibly easy to make. You simply mix together the ingredients and bake it in the oven until it’s golden brown and set. The lack of crust means you don’t have to worry about fussing with pastry dough, and it also means the quiche is lighter and healthier than traditional quiche recipes.

Ingredients

Butter – Butter is used to sauté the vegetables, adding richness and flavor to the dish.

Water – A little bit of water is needed to sauté the asparagus before adding it to the quiche.

Cottage cheese – Cottage cheese adds creaminess and a tangy flavor to the quiche filling, and it’s also a great source of protein.

A must-try recipe for all asparagus lovers!

Ingredients

  • 450g asparagus

  • 1 small red onion

  • half a bell pepper

  • 10g butter

  • 150ml water

  • 35g flour

  • 200g cottage cheese

  • 50g mozzarella cheese (or feta or goat cheese)

  • ½ tsp salt

  • ¼ tsp pepper

Directions

  • Clean the asparagus well with fresh water, then cut off the trims.
  • Before adding the asparagus to the quiche, you will need to steam it first. Add the butter to a pan together with the asparagus and water (it should be enough to cover the bottom of the pan). Cover and let steam for 5 min, then take out the asparagus and place it on a plate.
  • In a large bowl, add the eggs and beat lightly.
  • Dice the red onion and bell pepper and add them to the egg mixture. Chop half of the asparagus and reserve the rest for decoration.
  • Add the flour, salt, and pepper, and mix until well incorporated.
  • Add the cheeses and mix well.
  • Pour the egg mixture into the pie or ceramic pan and using the leftover asparagus, decorate the quiche however you like.
  • Bake the quiche in the oven for 1h at 180C/350F.
