  • 1-2 sweet potatoes (about 400g)

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp salt

  • ¼ tsp pepper

  • 100g feta cheese

  • 70g rocket salad

  • 300g mixed color tomatoes or cherry tomatoes

  • 60g olives (black, green, or mixed)

  • ½ red onion

  • Salt, pepper, drizzle olive oil (for the dressing)

  • Optional: 15g sun dried tomatoes and ½ tsp balsamic vinegar

Directions

  • Preheat your oven to 200°C (400°F).
  • Prepare the sweet potatoes: peel, wash, and cube the sweet potatoes. Toss them in a bowl with olive oil, oregano, salt, and pepper.
